Cyan Brighton offers unforgettable dining experiences, focusing on the small details that make each dish special. Our menus celebrate classic British staples with innovative twists and imaginative pairings, creating a unique culinary journey for every guest. Step through our doors and immerse yourself in an extraordinary dining experience, whether you're here for a leisurely lunch, a tantalising cocktail with small plates, or dinner overlooking the stunning Brighton seafront. Our menu showcases incredible seasonal dishes, from fresh local seafood mains to small plates that are just too good to share. Cyan does not offer all-day dining. We are open Monday & Tuesday from 5pm with a set menu only and open from 5pm Wednesday - Saturday for evening service with both a la carte and set menu options. On Sunday we are open from 12:30 - 5:30pm for Sunday Roast service.

Victoria Bar & LoungeThe Victoria Bar & Lounge is one of Brighton's best bars - the perfect spot to while away a few hours with friends enjoying drinks and a bite to eat. Our gorgeous bar is stocked with locally sourced gems, fine spirits and guest favourites, all specially selected by our expert team.Take a seat on one of our sumptuous sofas and soak up the warm and welcoming atmosphere. The design is centred upon luxurious hues of gold and deep blue and showcases local art pieces and the skillful tailoring of the Brighton based designer Gresham Blake.
